Rye

In our German bakery we use rye flour types 997 and 1100, which are high in dietary fibre, minerals and trace minerals and other components, like antioxidants. Rye sourdough bread is a 'jack-of-all-trades' for keeping your body healthy, as there are various different effects on digestion, blood sugar level, cholesterol level and disease prevention.
